With St. Patrick’s Day right around the corner we couldn’t pass up the opportunity for a Whiskey Wednesday cocktail that required both Irish whiskey and Guinness. And the Drunken Leprechaun from Sugar and Charm does not disappoint!

This drink is a little more complex then we tend to do, with a honey simple syrup and a Guinness reduction, but trust us, it’s easier than it looks and completely worth it.

To start make your syrup and reduction, mostly they both will simmer so you can get them going at the same time.

Honey Simple Syrup

  • 2 cups water
  • 1/2 cup honey

Bring to a boil until honey dissolves. Let cool.

Guinness Reduction

  • 1 can Guinness
  • 1 cup sugar

Bring to a boil and then simmer until the mixture reduces to about half of what you started with. This could take up to 30 minutes. Let cool.

Now it’s cocktail time!

You’ll need:

  • 1 oz. Guinness Reduction
  • 1 oz. lemon juice
  • 1 1/2 oz. honey simple syrup
  • 3 oz. Jameson Irish Whiskey
  • 4 mint leaves

In a cocktail shaker, combined all above ingredients with ice and shake your heart out. Strain into glass and garnish with a mint leaf.
